1 lg Sweet Potato
Water
2 cups Flour
2 tsp Baking Powder
1/4 tsp Salt
1 tbsp Sugar
3/4 cup solid shortening

Directions:
Directions:
Boil sweet potatoes until tender, about 15 minutes. Remove from water and mash. In a large bowl mix together the flour, baking powder, salt and sugar. Mix well and then sift. Add 1 cup of the mashed potato and the shortening; using a knife and fork cut them into the flour mixture. Work until a dough is formed. Add a little water if the dough gets too stiff. Roll the dough out on a floured board to a thickness of about 1/2 inch. Cut out biscuits and place them on an ungreased baking sheet. Put in an oven preheated to 400º and bake until the biscuits are golden in color, about 15 minutes.

Note: Spread butter or honey on the biscuits. These biscuits are great with almost anything, especially greens.
