Lemon or Orange Chiffon Pie Recipe

3 egg yolks beaten
5 Tbs. lemon juice 1/2 lemon rind zest
1 c. orange juice
1/2 orange rind zest
1/2 C. sugar
1/2 Tbs. plain gelatin
1/3 C. Cold water
3 egg whites
1/4 c.. sugar

Make or buy a 9 in. Graham Cracker Crust

Mix lemon or orange juices with beaten eggs and sugar and cook over double boiler until thick [ about 20 minutes] mixture will coat the wooden spoon.

Remove from heat and add the gelatin which you dissolved in the cool water

When mixture is cool
Beat the egg whites with the sugar until stiff
Then fold in egg mixture

Pour into the crust and refrigerate for several hours

May top with whipped cream or cool whip
