8 medium potatoes scrubbed and cut into 1" chunks
1 T. salt
1 container (16 oz.) sour cream
1/4 cup real bacon bits
4 scallions, thinly sliced
1/2 t. black pepper

Directions:
Directions:
Place the potatoes in a large pot and add enough water to cover them. Add the salt and bring to a boil over high heat. Cook for 10 to 15 minutes, or until fork-tender; drain well and allow to cool slightly. In a large bowl, combine the remaining ingredients, mix well. Add the potatoes and mix until well combined. Serve warm, or cover and chill until ready to serve.
