1 cup flour
1/2 cup butter
1 teaspoon baking powder
1 egg
1 tablespoon milk
1 cup apricot jam
1 cup sugar
1 teaspoon vanilla
1 egg
2 cup coconut

Directions:
Directions:
Mix flour and butter as pie crust until crumbly. Add baking powder and mix again. Mix in 1 egg and milk. Pat into a 8-1/2x12-1/2 inch ungreased pan. Cover with apricot jam. Mix together sugar, vanilla, 1 egg, and coconut. Spread over jam. Bake at 350º for 25 to 30 minutes.
