Small young beets

On the stove to boil:
2 c of apple cider vinegar
2 c of sugar
2 c of water
You can also spice up the boil with cloves, or cinnamon, or horseradish.

Directions:
Directions:
Cook small young beets in lightly salted water until tender. The tenderness should be like a potato salad. When done place them in cold water to stop the cooking. Peel off their skins and place them in a bowl.
On the stove to boil: Boil the mixture until it is hot and the sugar has dissolved. Put beets in the hot mixture and stir until they are heated through. Place in jars.
