5 lbs melon rind
5 lbs sugar
5 quarts water
5 to 6 large oranges or lemons cut into thick slices

Directions:

Peel melon rind leaving no trace of pink. Cut into 2-3 inch strips. Soak overnight in solution of 2 oz powdered lime and water to cover. Next morning rinse well and cover in solution of 2 tablespoons alum(powdered) and enough water to cover rind for 5 minutes. Drain. Mix sugar and water for syrup and heat before adding rind. Dip rind directly into syrup from alum solution without rinsing. Cook for an hour before adding fruit slices. Make more syrup if needed. Store as you would any other preserves.
