5 lbs. potatoes
1 1/2 cup chopped onion
2/3 cup melted butter
1 13 oz. can evaporated milk
4 eggs, beaten
2 1/2 tsp. salt
1/4 tsp. pepper
1/4 cup parsley
1 1/2 cup shredded cheddar cheese, divided

Directions:
Directions:
Peel potatoes and place in cold water. Saute onion in butter until tender. Add evaporated milk; bring to a boil and remove from heat. Combine eggs, salt and pepper in a bowl; beat until frothy. Shred potatoes into egg mixture. Add parsley, 1 cup cheese and milk mixture. Mix well. Put into a 13x9 baking dish sprayed with Pam cooking spray. Bake at 350º for 1 hour. Top with remaining cheese and bake 30 min. longer or until golden brown.
