2 lbs ground chuck
2 tsp seasoned salt
1 c chopped onions
1 (12 oz) can whole kernel corn
2 (4 oz) cans whole Ortega green chili peppers
2 c diced Monterey Jack cheese
1 1/2 c milk
1/4 c flour
4 eggs
Dash Tabasco Sauce

Brown chuck well in a large skillet. Sprinkle with seasoned salt during browning. Add onions and cook until soft but not browned. Drain corn well; stir into meat mixture. Drain chilies; slit each down one side and open flat. Layer one-half of chilies in a lightly buttered 3 quart casserole. Sprinkle with one-half of chilies in a lightly buttered 3 quart casserole. Sprinkle with one-half of cheese. Spoon meat mixture over cheese layer. Spread remaining chilies over meat and top with remaining cheese. Beat together milk, flour, eggs and Tabasco. Pour over casserole mixture. Bake in 350º oven uncovered 55 to 60 minutes until bubbly and browned. Allow to stand about 5 minutes before serving. Makes 6 servings.
Note: Prepare ahead to point of adding egg mixture; cover and refrigerate. Add egg and milk mixture just before baking.
