6 apples, peeled and coarsely chopped (2 lbs)
2/3 c chopped almonds
3 tbsp sugar, or to taste
1/2 tsp cinnamon
grated rind of one lemon
4 tbsp sweet red wine

Directions:
Combine the chopped apples, chopped nuts, sugar, cinnamon, lemon rind, and red wine; mix thoroughly. Add a little more wine as needed to make the mixture stick together.
(If the ingredients are too coarsely chopped for your taste, put them in a food processor and blend using short on and off bursts until the desired consistency is reached)
I use the cuisinart for the apples and the walnuts but be careful that they don't turn into powder!
