4 tomatoes, peeled and sliced
1 package cooked, crumbled bacon
1/2 cup chopped green onion
1 9-inch deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
salt and pepper
crushed red pepper flakes (optional)

Preheat oven to 350 degrees.

Wet tomatoes will make the crust soggy, so it is very important that they are well seeded.First, seed the tomatoes and slice thinly. Place the tomatoes in the collinder to drain, patting with paper towels if necessary to remove excess moisture.

Using a medium sized bowl, mix mayonnaise, cheddar cheese, mozzarella cheese, salt and pepper, and crushed red pepper flakes to taste.

Layer the tomato slices, crumbled bacon, and onion in pie shell. Season with salt and pepper. Spread the mayonnaise and cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.
