8 c. strawberries, hulled.
1 pkg (2 oz.) powdered pectin
1 cup light corn syrup
5 1/2 cups sugar
4 tbsp lemon juice

Directions:
Directions:
Crush strawberries to make 4 cups and place in a 3-quart pan. Stirring vigorously, slowly sift in pectin. Let stand for 30 minutes, stirring occasionally to dissolve pectin completely. Pour in corn syrup and mix well. Gradually stir in sugar. Carefully heat mixture just to 100º F- it should be lukewarm and no hotter. When sugar is dissolved, stir in lemon juice.

Ladle jam into 8 sterilized half pint jars, cover, and freeze for at least 24 hours. (Jam won't be solid because of sugar concentration). Makes 8 half pints.
