1 1/2 Cups powdered sugar, divided
1/3 Cup bourbon OR orange juice OR espresso
2 1/2 Cups crushed vanilla wafers (about 75)
1/4 Cup corn syrup
1 Cup chopped pecans (optional)
1 Tbsp unsweetened cocoa powder

Directions:
Directions:
Mix 1 Cup of sugar, bourbon & corn syrup in a bowl. (Can crush wafers in Cuisinart, add sugar and pulse, add liquids & pulse.) Remove and stir in nuts, if using.
Pinch walnut sized piece from dough and roll into a ball, repeat with the rest of dough.
Sift remaining 1/2 cup of sugar and cocoa powder together onto wax paper. Roll balls in this mixture.
You can also roll some of the balls in crushed nuts if you'd like. That way you have 2 different looking and tasting ball cookies.
