1/4 c. leftover mashed potatoes
1 tsp vanilla
a dash of salt
4 to 5 c. of powdered sugar
peanut butter

Directions:
Directions:
Mix first 3 ingredients together.

Add sugar until it's a dough consistency. It usually takes me about 4 to 4 1/2 cups. It will still be a little sticky.

Roll out dough onto powdered sugar covered wax paper.

Spread peanut butter over the dough. As thick as desired.

Roll it up like a jelly roll.
Refrigerate overnight...then slice into 1/2 - 1 in. pieces, it'll sort of look like a pinwheel.

Store in an airtight container in refrigerator.

Don't let the "potato" fool you! This is sooooo yummy, one of my all time favorites!

You could also dip these into melted chocolate and let harden!
