2 tsp. olive oil
1 tsp. pepper
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1 boneless rolled pork loin roast (3 1/2lbs.)

Directions:
Directions:
Combine the oil, pepper, cinnamon and nutmeg; rub over roast. Place on a rack in a shallow roasting pan. Bake at 350º for 1 1/2-2 hours or until a thermometer reads 160º. Let stand for 10 minutes before slicing.
