3 eggs
1 c. oil
2 c. sugar
3 c. grated zucchini
1 Tbsp. vanilla
3 c. flour
1 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
1 Tbsp. cinnamon
1 c. nuts

Directions:
Directions:
In large saucepan mix together eggs, oil, sugar, zucchini and vanilla and heat together until sugar melts but do not boil. Mix together in another bowl flour, soda, salt, baking powder, cinnamon, and nuts. Fold in saucepan ingredients to dry ingredients. Pour into greased (lined) loaf pans and bake at 350º for 50 minutes to 1 hour.
