Ingredients: 2 boneless skinless chicken breast 1 sheet shredded Phyllo pastry (room temp.) 2 tbsp. feta cheese 1 tbsp. basil pesto sauce 2 tbsp. diced black olives (optional) 1 tomato (finely chopped) 10 fresh basil leaves (finely chopped)

Directions:Pat chicken dry and season with salt and pepper. In a bowl, mix Feta cheese, chopped Basil with pesto sauce. Make a horizontal cut in chicken creating a pocket. Fill each chicken with Feta mixture. Wrap each breast in Phyllo dough and bake at 350º for 25 minutes. Serve with olives and tomato. |

Notes: I like to lightly spread pesto on stuffed chicken before wrapping with 2 layers of Phyllo since this helps the Phyllo stick. After carefully adding another layer of pesto I add thinly sliced Phyllo strips over the top to achieve the "Haystack" effect. Lightly spray with cooking oil to help golden the Phyllo before sprinkling with Paprika for added color.
