4 medium potatoes
1/2 cup dairy sour cream
1/4 tsp. garlic salt
1/8 tsp. black pepper
milk (optional)
1 T. snipped fresh chives
cheese sliced cheddar cheese or shredded
Bacon bits (optional)

Directions:
Directions:
4 medium potatoes; wash, poke with fork, wrap in foil, back 1 hour. Let stand 10 minutes. Cut lengthwise. Scoop pulp of potato in bowl. Mash the potatoes with potato masher or electric mixer. Add sour cream, garlic salt, and pepper. Beat until smooth. If necessary stir in 1-2 T. milk. Season to taste with salt and pepper. If desired stir in chives, bacon bits and shredded cheese. Spoon mashed potato mixture into potato shells. Place in baking dish. Bake 425º 20-25 minutes or until lightly browned. Place a piece of cheese over the top of each potato. Bake 2-3 more minutes until cheese is melted.
