Banana Pudding Recipe

Custard:
1/2 cup sugar
2 tbsp. flour
1/4 tsp. salt
2 cups evaporated milk
3 eggs, separated (use white in meringue)
1 tsp. vanilla

1 box vanilla wafers
approximately 6 ripe bananas

Meringue:
3 egg whites (stiffly beaten)
1/3 cup sugar
1/2 tsp. vanilla


Directions:
Directions:
Beat egg yokes; add sugar, milk, flour and salt. Cook at low temperature until thick as desired, stirring occasionally. (add water if too thick) Remove from heat; add vanilla & beat until smooth.

Layer casserole dish with vanilla wafers (bottom and sides). Add layer of bananas and half of the custard. Add another layer of vanilla wafers, bananas, ending with custard on top.

Top with meringue.

Bake at 325º until brown.
