5 cups sliced onions
1 T. oil
A dash of salt
2 quarts beef stock
Slices of French bread
1 T. olive oil
3 T. butter
1 tsp. sugar
3 T. flour
1 1/2 - 2 cups fresh Swiss or Parmesan cheese

Directions:
Directions:
Heat butter and oil. Add onion slices and cook covered for 15 minutes. Remove cover and increase heat. Stir in sugar and salt. Cook gently for 30 minutes, stirring often. Sprinkle flour over onions and mix well. Blend in stock. Season with salt if needed. Simmer 30 - 40 minutes. Place bread slices in shallow pan. Bake 325º until well dried about 30 minutes. Place a slice of bread into each bowl of soup. Top with a little oil and a cheese slice. Bake at 325º for 20 minutes.
