1 lb. ground beef
1 med. sized onion, chopped
2 6-oz. cans tomato paste
3 or 4 c. water
2 packets spaghetti mix
salt, to taste
1 box lasagna pasta
2 eggs, beaten slightly
1 16-oz. container cottage cheese ricotta cheese
12 oz. Mozzarella cheese
Parmesan cheese for top

Brown beef and onion, then drain. Add tomato paste, water, and spaghetti mix. While this is simmering, cook lasagna noodles in salted water. Meanwhile, in a bowl, mix beaten eggs with cottage (or ricotta) cheese. Preheat over to 375º. In large Pyrex dish, start building lasagna beginning with meat sauce, noodles, cottage cheese, and mozzarella cheese. Continue layering ending with meat sauce and cheeses. Sprinkle with Parmesan. Bake approximate 30 minutes. Let sit 15 minutes before serving.

This is one of our favorite dishes from "Grandmama Graham", another fine southern lady who taught us a great deal about food, family, and most of all, our Lord. She is truly a strong woman of great faith. Make a salad and some buttered garlic bread to go with this lasagna, and your family and guests will be amazed!
