1 pkg. Active dry yeast
1/4 C Warm Water
5 C All Purpose Flour
1/3 C sugar
3 t Baking Powder
2 t Salt
1 t Soda
1 C Shortening
1 1/3 C Buttermilk
1 1/2 C grated cheddar cheese

Directions:
In a small bowl, soften yeast in warm water; set aside. In a large mixing bowl stir together flour, sugar, baking powder, salt, and soda. With a pastry cutter, cut in shortening till mixture resembles coarse crumbs; Mix in cheese, Add yeast mixture and buttermilk; stir till combined. On a floured surface knead mixture about 2 min. or till smooth, adding more flour as needed. (To make ahead, the dough may be stored, covered, in the refrigerator over night.)

Roll out the dough to a 1/2 “ thickness. Using a 2 1/2 inch biscuit cutter, cut out 24 biscuits. If necessary, dip the cutter in flour between cuts. Place biscuits on a greased baking sheet. At this point, either bake the biscuit or, for a roll-like texture, let the biscuit rise, cover, in warm place for 45 min. (1 hour if dough was made ahead chilled). Bake in a 450 degree oven about 8 min. or till biscuits are light brown on the bottoms.
