1/2 medium bell pepper chopped
1 small onion chopped
1 12-ounce jar salsa
1 8-ounce can tomato sauce
10-12 flour tortillas
8 ounces cheddar cheese grated
3 pound whole chicken (approximate) cooked in crock pot

Directions:
Directions:
Remove chicken from bone and cut up into small pieces. For sauce, saute onion and pepper till onion is clear. Add salsa and tomato sauce and heat mixture. Set aside.

Place tortillas between two damp paper towels and microwave for 30-35 seconds. Assemble tortillas by placing chicken down the middle. Place about 1 tablespoon of sauce on top of chicken and sprinkle on cheese. Fold in ends of tortilla and roll up. Place in baking dish . Continue to assemble tortillas and place in layers. Sprinkle some cheese and sauce between layers.

Once all tortillas are in the baking dish pour remaining sauce on top. Sprinkle on remaining cheese.

Bake at 350º for 30-35 minutes.

Serve with rice.
