1/2 cup butter
1 cup brown sugar
1 large egg
1 tsp. vanilla
pinch of salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup flour (or a little more)

Grind the following in food chopper:
2 cups coconut
1 cup quick oats

Directions:

Mix baking powder & soda with flour. Add remainder of the ingredients and chill overnight, covered in refrigerator.

Next morning form little balls and flatten them a little with hand.

Place on cookie sheet and bake at 325-350º until golden.
