1/2 c. sifted Flour
1 1/4 c. Sugar
1 c. Boiling Water
1/3 c. Milk
1/2 T. Butter
1/4 c/ Lemon Juice
Grated Rind of one lemon
3 Egg Yolks
1 Egg White
Meringue:
2 Egg Whites
1/4 tsp. Salt
4 T. Sugar

Directions:
Directions:
Beat together 3 egg yolks and 1 egg white. Mix flour and sugar in top of double boiler. Add boiling water, stirring constantly and then add milk. Cook mixture over hot water until thick and smooth. Add eggs gradually, then butter, lemon juice and rind. Continue cooking until mixture drops in sheets from spoon. Cool and pour into baked pie shell. Beat 2 egg whites, salt, and sugar to stiff froth. Pour over lemon filling and bake to delicate brown.
