8 medium potatoes (about 2 2/3 lb.)
1 cup sliced green olives (5 oz. jar)
1 cup mayonnaise (light is OK)
1/2 cup sour cream (light is OK)
1/2 cup thinly sliced green onions
1 T. Beau Monde seasoning
Cracked or coarsely ground black pepper

Peel and chop potatoes (about 8 cups). In a covered large saucepan, cook potatoes in a small amount of boiling water for 15-20 minutes or until tender; drain well.
In large bowl, combine olives, mayo, sour cream, green onions, Beau Monde seasoning, and pepper to taste. Stir in potatoes. Cover salad and refrigerate for at least 2 hours or up to 24 hours, gently stirring salad once. May substitute 1 tsp. seasoned salt and 1/4 tsp. celery seed for 1 T Beau Monde seasoning. 12 servings
