1 to 1 1/2 pounds boneless, skinless chicken breasts
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 teaspoons butter, plus 1 teaspoon olive oil
1 cup chicken broth (or bouillon)
1 tablespoon fresh lemon juice
1 lemon, thinly sliced
1 pound fresh or frozen asparagus spears, sliced

Directions:

Pound chicken pieces to an even thickness. Mix salt and pepper with flour; dredge chicken in mixture, saving the excess flour. Heat butter and oil at medium-high heat in a large, heavy skillet; brown chicken on both sides. Remove chicken and reduce heat.

Combine 3 tablespoons flour with broth and lemon juice, stirring with a fork or small whisk to mix completely; add to pan. Add lemon slices and sliced asparagus. Simmer until asparagus is barely tender, about 6 minutes. Return chicken to pan and heat through, about 5 minutes. Serve with white rice or couscous.
