8-10 large potatoes
1 chopped onion
1 small jar pimentos - juice included
1 stick + 2 Tbsp. margarine

Directions:
Directions:
Boil potatoes with jackets on. Let cool. Peel and grate potatoes into a 9x13 baking dish. Mix chopped onion and pimentos into potatoes. Drizzle margarine over the top of potatoes. Bake at 350º for 45 minutes uncovered. Can be made the day before - refrigerate until time to bake.
