1/3 cup rice vinegar
1/4 cup minced shallots
2 tbsp. brown sugar
1 tbsp. minced garlic
3 tbsp. low sodium soy sauce
1 1/2 tsp. wasabi paste or 1 tsp. wasabi powder
4 salmon fillets, skinned

Garlic - Wasabi Mayonnaise:
2 tbsp. low fat mayonnaise
2 tbsp. plain fat-free yogurt
1 tsp. wasabi paste
1/2 tsp. rice vinegar
1 garlic clove, minced

Italian bread, toasted

Directions:
1. To prepare fish, conbine first 7 ingredients. Place 3/4 cup shallot mixture in a large zip-top plastic bag. Set remaining shallot mixture aside. Add fish to bag and seal, marinating 30 minutes.
2. Combine ingredients for garlic mayonnaise.
3. Preheat broiler.
4. Remove fish from bag and discard marinade. Place fish on broiler pan and broil fish 10 minutes.
5. Spread about 1 tbsp. of the mayonnaise mixture on top of each bread slice and top with a salmon fillet.

This recipe is not the usual fare for Nebraskan's, with salmon and wasabi in the ingredient list. However, it is a wonderful sandwich. My food monitor, Tim, gives it a thumbs up stating, "That is probably the best fish sandwich I have ever had." He doesn't love salmon, but indicated that this was one of those "keeper" recipes.
