1 lb ground beef
1 medium onion, chopped
3 cloves garlic, chopped
1/2 cup minute rice,uncooked
4 large, or 6 medium red bell peppers
1 can diced tomatoes (14oz)
1 can condensed tomato soup
1/2 cup sour cream

Directions:
Directions:
In a large bowl, combine ground beef, onion, garlic, and rice. Mix well, set aside.
Cut the tops off of the bell peppers, to form a cup. Remove the seeds and as much of the ribs from the peppers as you can. Stuff the meat mixture into the peppers, and place them into a large casserole dish. Pour the diced tomatoes over them, cover tightly with tin foil, and bake in a pre-heated 350º oven for 45 minutes to an hour.
While the peppers are baking, prepare the sauce. Pour the tomato soup into a small sauce pan, and heat it up. Do not boil. Spoon the sour cream into the soup a little at a time, making sure to mix well.
When the peppers are done, serve with mashed potatoes, and use the sauce as a "gravy" on the peppers and the potatoes.

This recipe originally used green bell peppers, but Mom switched to red because they tasted sweeter and they didn't "talk back".
