2 lb veal steak (preferably round bone)
2 eggs
1/4 cup milk
1 cup cracker meal
1/4 cup olive oil
2 cups chicken broth

Directions:
Directions:
Cut veal steaks into 4 portions. Beat eggs with the milk, to make an eggwash. Dip veal into eggwash, and then coat with cracker meal. (do not substitute breadcrumbs, they just don't work). Heat oil in a large skillet, and brown veal pieces. Drain veal on paper towels, and then place into large deep pan, such as a lasagna pan. Pour the chicken broth around, cover the pan tightly with tin foil, and bake in a pre-heated 350º oven for 1 hour and 15 minutes, or until the veal is soft and tender.
