1 c. oleo, 2/3 c. firmly packed brown sugar, 1 egg, 2 tsp. vanilla, 1/4 tsp. salt, 1-1/3 c. unsifted all-purpose flour, 1-1/3 c. shredded coconut.

Directions:

Cream butter and sugar until fluffy. Mix in egg, vanilla, and salt. Add flour in 4 parts (mix well after each). Stir in coconut. Drop by teaspoonfuls onto ungreased cookie sheets. Flatten with floured bottom of glass. Sprinkle with additional coconut, if desired. Bake at 375º, about 10 minutes or until lightly browned around the edges.
