Ingredients: Master Recipe: 4 large eggs (or use eggbeaters or some combination) 1/2 cup evaporated milk (I use skim) 2 tsp. Dijon mustard 1/2 tsp. salt and 1/4 tsp. ground black pepper
Fillings:
Bacon, Leek and Goat Cheese filling: 1/2 lb. sliced bacon, cut into 1 inch pieces 1 large leek, sliced thin 1/4 tsp. dried thyme leaves 6 oz. crumbled goat cheese
Spinach, Mushrooms, Tomatoes & Feta filling: 3 Tbs. olive oil, divided 1 10oz. pkg. sliced mushrooms or baby bellas salt and pepper to taste 1 10oz. pkg. frozen chopped spinach, thawed and squeezed dry 12 cherry tomatoes, halved 2 green onions, thinly sliced 1/2 tsp. oregano leaves 6 oz. (about 1 1/2 cups) crumbled feta cheese

Directions:Directions for preparing master recipe: Grease a 9 inch pie plate. Adjust oven rack to center and heat oven to 400 degrees. Whisk eggs, milk, mustard, salt and pepper. Stir in filling of choice. Pour mixture into the greased pie plate; bake until just set, about 20 minutes. Remove from oven and let rest 5 minutes. Cut into wedges and serve.
For bacon leek and goat cheese filling: fry bacon until crisp. Use bacon drippings to saute leeks until tender. Prepare master recipe for quiche and add thyme, cheese and bacon-leek filling to the egg mixture.
For spinach, mushroom, tomato and feta filling: saute mushrooms in 2 tbl. olive oil until golden brown about 5 minutes. Season with salt and pepper. Transfer to a bowl and add remaining oil, spinach and tomatoes. Saute to evaporate some liquid, 2 to 3 minutes. Sitr in onions. Add to mushrooms. Prepare master recipe for quiche and add oregano, feta, and spinach filling to the egg mixture |

Notes: This is easy to make and doesn't have the calories that some quiche recipes include. You can experiment with different combinations of vegetables, meats and cheeses using the master recipe as a base.
