16 oz soy sauce
2 oz straight bourbon whiskey, (we use Jim Beam)
12 oz beer (New Castle)
1 T habanero sauce
1/2 c yellow mustard
1 minced garlic clove
1 T ground pepper
1/2 tsp sea salt

Directions:
Directions:
This makes enough marinade for 4 lb. tri-tip roast.
Combine mustard and half a cup of soy sauce in a large bowl. (Big enough to hold liquid and tri-tip) Stir until mustard thins out. Add the rest of the ingredients and mix well.
Stab tri-tip a number of times on both sides.
Marinade for three days turning occasionally.
Cook on smoker or slow cook on grill with indirect heat with soaked wood chips. Helps to have meat thermometer.
