1# hamburg (optional)
1 medium onion (chopped)
1 medium green pepper (chopped)
2 envelopes mild taco seasoning
2 15 oz cans diced stew tomatoes
1 tsp salt (optional)
1/8 tsp pepper
2 boil-in-bags rice (cooked as directed on box)

Brown hamburg with chopped onion and green pepper in a 10" - 12" skillet until hamburg is throughly cooked. (If going meatless, saute onion and green in 1 tbsp of margarine until soft.) Add one envelop of taco seasoning (1/2 envelop if going meatless). Mix throughly. Add 2 cans of diced tomatoes, cooked rice, and additional 1/2 envelop of taco seasoning. Mix throughly.
Servings: 4 - 6.

To expand recipe, add additional can of tomatoes or additional bag of rice. Season to taste with additional taco seasoning.

Comments: I love this recipe because I can have it on the table in about 30 minutes and it taste great re-heated. (30 minutes is about the length of time a payroll professional is given to produce an off cycle payroll run for 300 special award checks, right?)
