1/2 cup butter, softened
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. ground nutmeg
1/8 tsp. ground cloves
1 egg
1/4 cup apple juice or apple cider
2 1/4 cups all-purpose flour
1 cup finely chopped apple

1. Preheat oven to 375º. Lightly grease cookie sheets. In a bowl, beat butter with an electric mixer for 30 seconds.

2. Add the granulated sugar, brown sugar, cinnamon, baking soda, nutmeg, and cloves. Beat until combined. Beat in the egg and apple juice and then as much flour as possible with the mixer, then finish adding flour by hand.

3. Drop dough rounds onto a prepared cookie sheet and bake for 12 minutes or until edges are just lightly brown. Leave on cookie sheet for 1 minute. Transfer cookies to wire racks and cool completely. Spread with Apple Frosting, below. Makes about 40 cookies.

Apple Frosting: In a medium mixing bowl, beat 4 cups powdered sugar, 1/4 cup softened butter, 1 tsp. vanilla, and 4-5 tbsp. of apple juice. Makes 1 1/2 cup.

Anyone who knows me knows how much I dislike baking. In planning for Christmas 2007, I was feeling guilty about not baking more with Sidney, and I had saved this recipe torn out of a magazine. I decided the time had come to try this recipe and give Sidney a chance to bake. Well, the result was a keeper recipe. I wish I could give credit to the source because these are fabulous cookies. In our house we have Tim as our food rater and he gave these a 10!
