20 whole black peppercorns
2 bay leaves
2 whole cloves
1/2 lemon
3 pounds medium chicken tenders
1/2 cup plus 2 tbsp. spicy brown mustard
1/2 cup honey
1 1/4 tsp. curry powder
3/4 tsp. lemon pepper
1/8 tsp. salt
Butter for spreading
1 loaf challah bread
1/2 cup shredded carrots
1/2 cup slivered almonds
2 medium tomatoes, chopped
1 bag of salad greans
red grapes

1. In a large saucepan over high heat, add peppercorns, bay leaves, cloves, lemon, and 14 cups water. Cover and bring to a boil and then add chicken, cooking until done, about 7-10 minutes. Drain and cool, then chop chicken.

2. In a large bowl, combine mustard, honey, curry powder, lemon pepper, and salt. Stir in chicken. Cover and refrigerate 1 day.

3. Butter both sides of bread slices in a heated nonstick skillet over medium-high heat, cook bread in batches for 3-5 minutes until browned.

4. Combine carrots and almonds with chicken mixture. Divide chicken among 6 bread slices and top with tonatoes, greens, and bread. Serve with fruit.

This recipe came from Oprah's magazine in November 2004. Margaux Sky owned a restaurant in California called the Art Cafe and Bakery. Oprah tried the sandwich and declared it the best she had ever tasted. The article discussing food claims it is soul-soothing. Well, I tried it at home and even made my own challah bread, which, since I don't bake, is a big deal. It was great. Now..Tim didn't love this sandwich..he's not a big curry fan which you must be to like this one. I, however, thought it was fabulous. The bread makes it though, so be sure to use challah.
