1 1/2 cups sugar
1 cup oil
2 cups zucchini grated
1/2 teaspoon vanilla
1 cup walnuts
1/2 cup raisins

3 cups flour
1 teaspoon. baking powder
1 teaspoon. baking soda
1 teaspoon. cinnamon

Heat oven to 350 degrees, Grease muffin pans. Beat sugar and eggs for 2 minutes, add oil slowly, beating constantly for 2-3 minutes. Add zucchini and vanilla blend well. Add raisins and walnuts mix, add dry ingredients and mix just until moist. Bake 20 minutes

This is a good way to use up extra zucchini. It is very good, and makes nice gifts for friends. I have changed the recipe through the years to make it more healthy. I use 1 cup whole wheat flour 1 cup oatmeal and one cup white flour. I use only 1 cup sugar, 1/2 cup oil and add 1 cup of pureed fruit. any fruit will work , apple sauce, peaches, bananas, nectarines, any fruit. I also use any dried fruit and nuts I have in the cupboard. I put the muffins in zip loc bags and freeze them, they are great to grab on the go
