2 lbs flounder filets
1/4 cup chopped onion
1/4 cup butter
1 3 oz can mushrooms drained juice saved
8 oz. crab meat
1/4 cup corse cracker crumbs
1/4 cup chopped parsley
1/2 teaspoon salt
3 Tablespons. butter
3 Tablespoons. flour
salt and milk
1/3 cup dry white wine
4 oz Swiss cheese
paprika

Directions:
Directions:
Cook onion in 1/4 cup butter till tender. Stir drained mushrooms and crab, crackers, parsley, 1/2 teaspoon salt & dash pepper. Spread mixture over fish and roll up. Place seam down on baking dish. Melt 3 Tablespoons butter, blend in flour and 1/4 teaspoon salt, add enough milk to mushroom juice to make 1 1/4 cups with wine to sauce pan. Cook and stir until thickened and bubbles. Pour over fish and bake at 400 degrees for 25 minutes. Sprinkle with cheese and paprika. Return to oven and bake 10 minutes or until fish flakes with fork.

This is an great dish to serve guests. It is very easy and makes a beautiful presentation.I always sprinkle with fresh parsley.
