1 can whole bamboo shoots
rice
2 tbsp chopped spring onions
1 tsp crushed garlic
3 Tbsp chopped shallots
2 Tbsp fish sauce
2 tbsp lime juice
1 tsp granulated sugar
2 tsp dried flaked chillies
20 small mint leaves
1 Tbsp toasted sesame seeds.

Directions:
Directions:
Drain the bamboo shoots and slice them.

In a nonstick frying pan, toast the rice till golden.

Mix the rice, shallots, garlic, spring onions, fish sauce, lime juice, granulated sugar, chillies and part of the mint leaves (half will do) in a bowl.

Pour the dressing onto the bamboo shoots and toss the salad evenly. Sprinkle sesame seeds the mint over it. Serves 4 WW: 0.5 Points
