1 pierna de cordero
6 ajos grandes picados
1 ½ cebolla picadita
100 grs. de mantequilla
2 kg. de papa blanca en rodajas de 1 cm.
2 pimientos rojos picaditos
tomillo, laurel, sal y pimienta
1 cubito de caldo de carne

Usar una paila enmantequillada. Acomodar una cama de papas cubriendo el fondo. Rociarles encima parte de los ajos picaditos, de la cebolla, del tomillo, sal y pimienta, del laurel picadito finísimo o molido y mantequilla en trocitos. Cubrir con otra capa de papa encima y repetir el espolvoreado de ajos, cebolla, especias, etc.

Preparar un caldo disolviendo el cubito en regular agua hirviendo. Con parte de este caldo rociar la papa para que no quede seca.

Hacer incisiones a la pierna de cordero y allí echarle la mezcla anterior (sal, pimienta, ajos, cebolla, tomillo, laurel) y frotar también con esto la pierna por encima. Colocar la pierna sobre las papas, distribuirle trocitos de mantequilla encima y llevar al horno bañándolo cada ½ hora. Debe resultar jugoso.
