4 medium potatoes
2 medium beets
1 medium carrot
1 medium onion, minced
2 ribs of celery, chopped (optional)
mayonnaise to taste (approximately 1/2 cup)
salt to taste
pepper to taste

Boil potatoes and carrot together until done. Boil beets until soft. Chop potatoes, carrot and beets to cube size. Mix the rest of the ingredients and chill.

A tasty variation of potato salad. This salad is popular in open air dance areas (toldo) and fairs - usually in the interior of Panama. Some other foods offered at these dances/fairs are sancocho, (Panamanian chicken soup) meat on a stick, yuca frita (fried boiled yuca) and fried corn tortillas.
