1 pound veal or chicken
1 egg, beaten with 1 tablespoon water
1/3 cup Parmesan cheese, grated
1/3 cup bread crumbs
1/4 cup olive oil
1 onion, chopped
1 6-ounce can tomato paste
1 cup water
1 can whole tomatoes or crushed (14 to 15 ounces)
1 teaspoon salt
2 or 3 cloves garlic, chopped
1/2 teaspoon oregano, dried
1/2 teaspoon basil, dried
1/2 pound mozzarella

Combine Parmesan and bread crumbs. Pound meat thin, using plastic sandwich bag and mallet. Dip meat in egg and water mixture, then in cheese and bread crumb mixture. Brown meat in oil. Remove meat to oven-proof pan. In same skillet, combine tomato paste, onion, tomatoes, water, and seasonings. Simmer until thickened. Pour over meat. Top with mozzarella. Bake at 350 degrees until hot and cheese is lightly browned.
