5 lbs. Potatoes, boiled, then peeled and diced
1 small jar sweet pickles, drained, save juice
1 stalk celery, chopped
1 large onion, chopped
1 dozen eggs, boiled; chop 9 eggs and save remainder to garnish top
1 pint mayonnaise ( Do not use salad dressing)
Salt and pepper to taste
1 can water chestnuts (optional)

You can use some of the pickle juice that you have saved to get the right consistency and taste. Place the sliced eggs on top and sprinkle with paprika. Yep, it makes a lot, and you need a large bowl for the whole recipe. You can cut it, down, but it’s never quite as good if you do. So I use it for a big crowd and for sharing with friends.
