˝ cup sake´
2 tbsps. rice vinegar
2 tbsps. lite soy sauce
1 tbsp. vegetable oil
1 tbsp. miso paste
1 tsp. who peppercorns, crushed
1 tbsp. vegetable oil
12 sprigs fresh tarragon
6 Alaskan salmon fillets with skin (5 to 6 oz. each)

2 tbsps. rice vinegar
4 tsps. lite soy sauce
1 tbsp. sugar
˝ tsp. miso paste
1 tbsp. vegetable oil
Sliced Kirby or seedless cucumber

Marinade: sake', rice vinegar, soy sauce, vegetable oil, miso paste, peppercorns, vegetable oil, fresh tarragon, Alaskan salmon fillets with skin.
Combine ingredients for marinade and arrange salmon filets in a single layer in a glass-baking dish. Marinade over salmon and cover dish with plastic wrap. Marinate in the refrigerator 2 hours or overnight, turning fillets once. Heat grill to medium. Oil cooking grate. Remove fillets from marinade, reserve marinade. Brush skin side of each fillet with oil. Arrange fillets, skin side down, on grill; top each with 2 sprigs of tarragon. Brush with reserved marinade. Close lid and grill fillets 8 to 12 minutes or until just cooked through.

For dressing combine: rice vinegar, lite soy sauce, sugar,. miso paste, vegetable oil, Sliced Kirby or seedless cucumber, for garnish. Whisk all ingredients in small bowl. Transfer salmon to a large serving plate. Drizzle dressing evenly over the salmon and garnish with cucumber.
