2 Tbsp drippings
whole duck
4 Tbsp fat
11 Tbsp flour
2 large onions chopped
2 large bell peppers chopped
4 pieces celery chopped
2 cloves garlic chopped
5 cups chicken stock (cold)
red pepper and salt to taste
green onions
parsley

Directions:
Directions:
Brown duck in fat.

Make dark roux with fat and flour. Add onions, bell pepper, celery and garlic and cold chicken stock. Cook until tender. Boil duck in liquid until tender. Then skin and bone it. Add meat back to gumbo. Add red pepper to taste. 30 minutes before serving add chopped green onion tops and parsley.
