Ingredients: Dough: 2 c. flour 1 egg 1/2 c. olive oil 1/2 c. white wine Water Salt
Filling: 3 cans ceci beans 1/2 lb. almonds 1/2 lb. (or half a bag) bittersweet chocolate chips 1/2 lb. (or half a bag) sweet chocolate chips Orange zest (Uncle Reuben remembers scraping a whole orange) 1 tsp. cinnamon 1/2 c. honey 1/2 c. sweet red wine

Directions:Dough: 1. Make a well in the center of the flour. 2. Add egg, olive oil, white wine and some salt. Knead together to form a ball. 3. After rolling out the dough, form as you would for ravioli. 4. Spread some of the filling on each ravioli, fold over and seal with a fork. 5. Fry in hot olive oil, do not submerge. Let drain on paper towels and you can sprinkle with a mixture of cinnamon and sugar.
Filling: 1. Shell, boil and peel the almonds (or use prepared peeled almonds). Roast almonds in frying pan. 2. Grind everything together except the honey and sweet wine; once ground together then mix in the honey and sweet wine. |

Notes: Grandma DiSalvatore would only make this cookie at Christmas. There are many different styles of this cookie, also known as "cavezune", depending on what region of Italy your family is from. Many Italians make these cookies to celebrate "La festa di San Giuseppe, marito di Maria" - The Feast of St. Joseph, husband of Mary, on March 19th.
