2 1/2 cups all purpose flour
1 1/2 cup sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cocoa powder
1 1/2 cup vegetable oil
1 cup buttermilk, room temp.
2 large eggs
2 tbsp. red food coloring
t tsp. white distilled vinegar
Cream Cheese Frosting:
1 lb. cream cheese, softened
2 sticks butter
1 tsp. vanilla extract
4 cups sifted confectioners sugar

Directions:
Directions:
Preheat oven to 350º. Line 2 (12cup) muffin pans with papers. In med mixing bowl; sift together flour, baking soda, powder and cocoa powder. In large bowl gently beat together oil, buttermilk, eggs, food coloring, vinegar, and vanilla with mixer. Add dry ingredients to wet, mix until smooth. Fill tins 2/3 full; bake about 20-22 minutes; turning pans once 1/2 way through. Remove from oven and cool completely. Frosting: In large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar on low speed until incorporated. Increase the speed to high and mix until very light and fluffy. Ice cakes when they have cooled completely.
