1 medium onion, chopped
1 lb mushrooms, sliced
1 clove garlic, minced
2 zucchini, sliced
1 green bell pepper, chopped
1 28-oz can crushed tomatoes
1 15-oz can diced or stewed tomatoes
1 15-oz can tomato sauce
1/4 cup fresh parsley, chopped
1 tsp. dried basil
1 tsp. dried oregano
1 cup fresh spinach

Directions:
Directions:
Place the onion, mushrooms, and garlic in a large pot with a small amount of water. Cook and stir over medium heat for 3-4 minutes. Add the zucchini, bell pepper, tomatoes, tomato sauce, and seasonings. Cook, uncovered, over medium-low heat for 1 hour. Stir in the spinach. Cook just until the spinach wilts, about 2-3 minutes. Serve over pasta, potatoes, or other whole grains like brown rice. Can also be served over
zucchini "pasta." (Using a vegetable peeler, create long wide "noodles" of raw zucchini.)
