3 cups mashed potatoes
3 T. oil
1 T. sugar
1 cup flour
salt

Mix ingredients and chill. Divide into small portions and, using a rolling pin, roll each out on a floured surface to make pancake size cakes about the thickness of a flour tortilla. Put in a hot skillet and brown on both sides. Put butter and sugar on the cake and roll it up to eat.

This is Grandma Reisetter's recipe. I used to make these as a treat for my family although it is labor intensive. The amount of each ingredient is only approximate depending upon the consistency of the potatoes and other variables. Everyone in the family tried to see that there were leftover mashed potatoes so that they could have potato cakes the following day.
