2 cups cooked brown rice
1 apple, cored and chopped
1/3 cup apple juice
1/4 cup maple syrup
2 tsp. lemon juice
1 tsp. vanilla extract
1/2 tsp. ground cinnamon

Directions:

Preheat the oven to 350º F.

Combine all the ingredients in a casserole dish with a cover. Bake in a conventional oven for 45 minutes. Serve hot.
